RECIPE OF MUTTON ROGAN JOSH
Mutton Rogan Josh is a famous Kashmiri curry known for its deep red color, rich aroma, and slow-cooked tender mutton in a flavorful gravy.
750 g mutton (with bone, medium pieces)
3 tbsp mustard oil or ghee
2 medium onions (finely sliced)
1 cup yogurt (well whisked)
1 tbsp ginger-garlic paste
2–3 dried Kashmiri red chilies
1 tsp Kashmiri red chili powder (for color)
1 tsp turmeric powder
1½ tsp fennel powder
1 tsp dry ginger powder (saunth)
1 tsp garam masala
2–3 green cardamoms
1 black cardamom
1 small cinnamon stick
2 cloves
1 bay leaf
Salt to taste
2 cups hot water
